Heat Exchangers Help Candy-Maker
Alfa Laval's Contherm is used in Astra Sweets' candy paste and dough products to heat dough to 248°F (120°C) for pasteurization and cool it to 158°F (70°C) afterwards.
The dough or candy paste is pumped into the lower end of the product's cylinder. As it flows through the cylinder, it is continuously agitated and removed from the cylinder's walls by scraping blades. This scraping action results in product heating and cooling with a high heat transfer rate without fouling.
The products allow the candy company to skip daily cleaning routines, which can take long with heat exchangers.
