A cold storage firm used an in-rack freezing system to evaluate freezing and tempering times against traditional blast freezing and tempering methods.

Faced with the challenge of a 72-hour freeze time for pork, Mattingly Cold Storage aimed to reach temperatures of 0°F in 48 hours or less while operating a -10°F freezer. Using Tippmann Innovation’s QF+ in-rack freezing system, Mattingly reached the desired freezing and tempering goals and increased product turn rates. As a result, the company installed a QF+ in its Zanesville, Ohio, facility.
